Absinthe is a spirit with a high alcohol content of 80%, with a slight aniseed flavor and a bitter undertone from the maceration of the herbs it is made from, mainly Artemisia abinthium.

Absinthe is served in a glass, with one part liqueur and two to four parts cold water, which is poured into the glass through a perforated spoon with a sugar cube placed on top, so that the sugar is diluted as the water passes through.
